What up? What up?! Chocolate - that's what, party peoples!!! :P This tasty little vegan cupcake was a bright spot for me late Friday afternoon. Thanks, mom - I love how you spice up life with sweet little surprises. :-)
Ada's gluten-free, soy-free, vegan cupcakes are made here local in town! Oops. Maybe that's something I shouldn't know because they're so good! :P
Thursday night's dinner was brown rice pasta salad with veggie stir-fry, salad and organic whole grain bread with coconut oil. By the time supper rolled around - I was starving (!) so everything tasted extra good! :-)
Tomato soup for supper, anyone? Friday night I opted out of a camping invite. Sorry - party pooper! Instead I laid on the couch for movie night with the girls. :) I like to watch movies about camping, does that make sense? :P
My current favorite food is whole wheat toast spread with coconut oil and . . . honey! Spectacular combination. You should try it!
The past couple of days I really haven't felt much like running. And, I didn't feek like it this morning either, but -- that's why I knew I had to go for a run. Happy to say I really got into it and was motivated to go a mile further than I set out to. :) Love that feeling!
It'd been a while since I'd run 4 miles so it felt fantastic! 4.1 miles in just over 36 minutes. I need to up my milage to at least 5 because of an upcoming race!

Phew! So intense. Seriously, I left the theater with a greater appreciation for our US warriors. So thankful. How do you process a movie like this?
This evening was another birthday celebration in my family! Jon-boy you're growing up too faaaasssst. I can't believe you're 13!!! {Does that mean I'm old when I start talking like this?}
Inspired by yesterday's cupcake - I decided to try and make my own version of a healthy cupcake for the birthday boy. :) You know me - gotta get my hands on it!
Chocolate mocha cupcakes = happiness. :) There are still a few left so if you want one -- come on over!
I was going to try a new recipe and do some experimenting but ran out of time. Instead, I subbed with the ingredients I had on hand using this recipe {click here} as my base. :)

The cupcakes look great! I am definitely going to try coconut oil with honey on toast. It sounds perfect!
