Look What I Found :)


Prices at Walmart. I was at this crazy mad house this morning and look what I found! Knocked my socks off . . . lol!

Seriously, people - sometimes organic can be the best buy, like in this case. Gotta compare those unit prices. :) How you found any healthy food deals like this before? Do tell!


A recent stop by my local Health Food Store for some more green powder. 


I'm trying, I'm trying . . . baby steps towards healthy hair products. I know I've needed to do this for months now. Why is it so easy but yet so hard all in one? 


I had carrot juice with breakfast yesterday. 

Can you believe this juicer is from Walmart and only $20???!!!! We bought this one when our couple hundred $$$ juicer was being transported in a card board box, fell through the bottom and broke - ah, ooouch! Right, that's what we get for trying to be all healthy and take it on vacation with us. :P But, this was a quick economical fix and works great! Go get ya one. :) 



My auntie was so sweet to come over and make a huge pot of yummy chili yesterday. Actually she made 2 - one with just beans & another pot with our farm raised, grass-fed beef. Delish!

I ate a late lunch today and was so hungry by the time I got to some food! 


Dinner was shredded BBQ chicken, spinach salad w/ dried cranberries & apples slices with sun butter. What did your supper plate look like?


Dessert? Uh, ah- right. I just felt so guilty not helping out with the cobbler leftovers that I had to pitch in. :P Whatever . . . 


Unfortunately sometimes I'm famous for waiting until the last minute to do something. :P Maybe a little bit of cram time this evening??? :(  I found this awesome karaoke track but the written music isn't available. Sometimes I can go by ear, but I feel safer if I write it out. :-)

Upcoming New Year Nutrition Kick-Off / Sign-Up for the Challenge!

Yummy Food!


This was the supper feast: baked Parmesan chicken, garden salad, roasted potatoes, rolls & homemade blueberry cobbler. *Blissful sigh*

Thank you, Mrs. S! You are an amazing cook!!! I love it whenever you bring supper over or we get an invite to your house. :-)


I hadn't been for a run since last Monday so this felt awesome!


The weather was unusually warm today - in the 70s! With it so beautiful outdoors, I took my stretching outside. This lil' sweetie pie kept me company. :) 

I went through a phase of not liking dogs (sorry animal people. Believe me, though - I had good reason!), but I think I'm moving back towards the "love 'em" phase. I mean, how can you resist this adorable little face? :0


This was lunch. A bed of spinach with a spoonful of Bubbies pickles for pro-biotics and some roasted red pepper hummus with shredded carrot.

Aaah, there's nothin' like homemade blueberry cobbler. :) Yes, Mrs. S you certainly know how to do it.

Ginger Spiced Cookies


It's Christmas! And, what's the holiday season without a little ginger to spice it up? :-)


I decided to give a go and see if I could transform a Paula Deen recipe into a healthy one and it still taste good. :P 

I skipped the rolled sugar step and just used a cookie scoop. Cook until soft or crispy - your choice!

"I'm Not Thinking Anyone . . ." (Fresh Friday Wk 5)

That's what I announced to my sister about somethin' when I came downstairs this morning, ready to face the day. Yep, I just decided - that's all there is to it. :P No more thinking, Katherine - just do it.

And then we start saying "just do it!" in a cadence that makes it an inside joke . . . lol!

Deck the Halls

Growing up I was hugely involved with decorating the house as a kid - so fun! But, since I've gotten "older" I feel more like that song in the Grinch "Where are you Christmas?". LOL!!! And, also when you grow up you have to work. :P


Isn't this the most beautiful puppy? Ever? Love him! And, the sister holding him. :)


Last night's supper was super wholesome - roasted sweet potatoes w/ grass fed beef (raised on my family's farm) and a spinach salad. Way to go, bros!


I kept pushing lunch back today because I wanted to keep "getting things done before lunch". :P

Banana Spiced Muffins (+ Kale Chip giveaway winner!)


By special request from mom - I made these muffins with brown rice flour. A little touch of homemade TLC goes a long way towards to healing process. :) You know those times when you were sick as a kid and your mom took care of you? And- how it helped, but it didn't? Same kind of thing. :P

Here's the recipe:

Banana Spice Muffins 
(makes 24 good sized mini muffins)

2 cups organic brown rice flour
1 teaspoon baking soda
1/4 teaspoon sea salt
2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
2 medium eggs
1/3 cup honey crystals
1/4 cup melted coconut oil
2 teaspoons vanilla extract
3 small overly ripe bananas, mashed

Mix the dry ingredients and then add the wet. Spray your muffin tins and bake at 350 degrees for 10 - 20 minutes. Eat hot with lots of butter!


I really love how coconut oil makes muffins so moist! Just be careful not to overcook. :)

I woke up this morning with excitement running through my veins! I have some serious work catch-up to play having been gone for almost 2 wks. Not to worry - a little pressure goes a long way. :P

This was the first green smoothie I've had in a week and a 1/2!!!! So thankful to back in the swing of things. :)

I made this one with a packet of vanilla flavored PerfectFit protein, water, organic spinach, 1 large carrot, some frozen banana, and ice. Refreshment at it's best!


"Feelin' the love . . . " - organic spinach from close friends!!! We probably spend way too much time together for them to know this is the perfect gift . . . lol!

Seriously guys, my mom is doing amazingly well. She beat the average hospital stay and received several comments from the medical profession on how inspiring her vigor and drive for life are!

It's really sad to visit a hospital and see so many people who are by themselves (with no family) and with no motivation to live. I know it was a huge encouragement for the doctors and nurses to have Mom for a patient! So now the challenge has moved to getting her to rest at home . . . hum, which is harder???? Hospital or home. No, I'm just kidding - but you get the point. :P


Meeting today at the Botanical Garden! Fun holiday music programs to come. :) And - yeeaah - I get to perform a song from the Grinch. :P Anyone else a lover of this classic, too?
