Yummy for YOUR Tummy! Cinnamon Honey Peach Cobbler
Inspired by a ripening box of juicy peaches and a recent cozy / rainy Saturday evening -- I got on Google, stumbled across Buns in My Oven and went from there!
Pulled up a chair and serve yourself some freshly made cobbler. :) Oh, and bring the ice cream!
Cinnamon Honey Peach Cobbler
Fruit filling:
4-5 cups peeled and slice (juicy!) peaches
1 tablespoon cinnamon
1/4 cup honey
sprinkle of salt (this really brings out / balances the sweet flavor!)
Dough:
1.5 cups freshly ground whole wheat flour
1 1/2 teaspoons aluminum-free baking powder
2 tablespoons cinnamon
1/2 cup coconut oil
1/2 teaspoon salt
1/3 cup hot water
Filling directions:
Peel and slice peaches. Drizzle with honey, sprinkle cinnamon on. Add a dash of salt, to taste. Mix it all together! Pour into a pretty glass dish.
Dough directions:
Mix together dry ingredients. Add slightly melted coconut oil, hot water & honey. Drop by spoonfuls on top fruit mixture.
Bake at 350 for 25 to 30 minutes or until golden brown. Serve with a scoop of sweet vanilla ice for best results. =)
What kind of person are you --- (A) the cold cobbler type or (B) the freshly made, hot out of the oven gimme a big ole melting scoop of sweet ice cream kind of guy/gal?

THIS LOOKS AMAZING! I am making it pronto. I am definitely the cold cobbler type, but my husband likes it right out of the oven.
