Banana Spiced Muffins (+ Kale Chip giveaway winner!)


By special request from mom - I made these muffins with brown rice flour. A little touch of homemade TLC goes a long way towards to healing process. :) You know those times when you were sick as a kid and your mom took care of you? And- how it helped, but it didn't? Same kind of thing. :P

Here's the recipe:

Banana Spice Muffins 
(makes 24 good sized mini muffins)

2 cups organic brown rice flour
1 teaspoon baking soda
1/4 teaspoon sea salt
2 teaspoons ground cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
2 medium eggs
1/3 cup honey crystals
1/4 cup melted coconut oil
2 teaspoons vanilla extract
3 small overly ripe bananas, mashed

Mix the dry ingredients and then add the wet. Spray your muffin tins and bake at 350 degrees for 10 - 20 minutes. Eat hot with lots of butter!


I really love how coconut oil makes muffins so moist! Just be careful not to overcook. :)

I woke up this morning with excitement running through my veins! I have some serious work catch-up to play having been gone for almost 2 wks. Not to worry - a little pressure goes a long way. :P

This was the first green smoothie I've had in a week and a 1/2!!!! So thankful to back in the swing of things. :)

I made this one with a packet of vanilla flavored PerfectFit protein, water, organic spinach, 1 large carrot, some frozen banana, and ice. Refreshment at it's best!


"Feelin' the love . . . " - organic spinach from close friends!!! We probably spend way too much time together for them to know this is the perfect gift . . . lol!

Seriously guys, my mom is doing amazingly well. She beat the average hospital stay and received several comments from the medical profession on how inspiring her vigor and drive for life are!

It's really sad to visit a hospital and see so many people who are by themselves (with no family) and with no motivation to live. I know it was a huge encouragement for the doctors and nurses to have Mom for a patient! So now the challenge has moved to getting her to rest at home . . . hum, which is harder???? Hospital or home. No, I'm just kidding - but you get the point. :P


Meeting today at the Botanical Garden! Fun holiday music programs to come. :) And - yeeaah - I get to perform a song from the Grinch. :P Anyone else a lover of this classic, too?
