Summer is on it's way!!! The weather here has been atypical for North Carolina. Super cool, breezy and fantastic! I'm relishing the back porch and good books. :)
So, looking for something light and healthy? Try these!
- 1 large cucumber
- garlic hummus
- almond or rice cheese slices
- tomato slices, thin
- tooth picks
Wash and dry cucumber. Slice into 1/4 inch thick slices. Spread a think layer of garlic hummus and top with tomato and cheese slices. Sandwich with another cucumber slice and stick toothpick through.
Serve chilled. :)
How is everyone's Monday coming off so far?!
How was Mother's Day? (Pics to come . . . !)
Any health action steps for the week? Running is on the list for me!!! =)

Yum, those cucumber sandwiches look delicious!
I've always wanted to give these little sandwiches a try. Such a great idea to use hummus instead of the other spreads. Happy running to ya! It's on my list too :)
These would be great to bring to a party. Thanks for the idea.
Great summer snack
This do sound really good for summer. My dad had a huge vegetable garden, and he got me hooked on cucumbers. Thanks for the idea!
Cute. My daughter loves making cucumber sandwiches like those.
